The Demo version of Sin supports multiplayer games over a Local Area Network (LAN), or via the Internet using the Gameranger opponent-finding service. The retail version also supports GameSpy server location, for playing against opponents on the Internet using Microsoft Windows.
If you are unable to join a game on someone else's server, it may be because you are using the demo, which contains only a few maps. The retail version includes many more multiplayer maps, and games like "Capture the Flag" for more multiplayer mayhem!
